Not too long ago, a vegetarian meal would have meant vegetable biriyani or a simple fare of rice and sambhar or dal with a couple of additional dishes of bland or spicy vegetables.
Today, it’s all about traditional vegetarian cuisine with a twist. Chefs are focusing on making vegetables just as delicious as their meaty main course alternatives but with an innovative twist for all veggie ingredients. And, of course traditional vegetarian courses will tastefully co-exist at Subz.
With over 60 vegetarian dishes, Subz is an absolute delight for vegetarian food lovers. Here is an interesting fusion of North and South Indian vegetarian cuisines to pamper guests from across India. And, in a cosmopolitan city like Bangalore, regular customers from different states are offered an endless variety of options to choose from. The menu varies each day and our Executive Chef, creates mouth-watering specials each day to stimulate your palate.
Apart from the never-ending list of flavoured, spicy and dishes tastefully spread out on long tables where you would spend more time deciding what to ladle on to your plate, the salad counter has a wide variety of fresh leafy vegetables for the health-conscious.
One you are refreshed by the even fresher salad line, you move on to starters where you can begin your feasting spree.
Here, we have an Indian style line where there is til ka baby corn, tandoori veggies, and Subz’ all-time favorite phaldari tikki which comprises apple, pineapple, cottage cheese and potato with the Executive Chef secret sauce of in-house spices. The Chinese style starters are a seamless blend of Chinese sauces to suit the Indian vegetarian palate and these sour-sweet vectors invariably include amchoor (green mango powder), oniony asafetida and black cumin with its soul of smoke to give that exotic taste you will not find anywhere.
With over 40 main course dishes, it becomes slightly difficult to pick out the favorites but nonetheless you cannot miss out the aloo teheri ( a dish from Uttar Pradesh) and exotic looking and tasting biryanis – all made with fresh farm-to-table vegetables.
At Subz, you can also enjoy the fresh taste of zucchini or any vegetable, lightly sautéed in oil and draped with a rich garlicy cream sauce tossed hot pasta and Parmesan cheese, then served immediately with more cheese grated on top. These delectable and scrumptious pastas – choice of alfredo (white) or arrabiata (red) sauce - are yet another crowd puller.
At our new live grill counter, you can choose your own battered, stuffed or freshly cut vegetables, say, zucchini, brinjal, baby corn, bitter gourd or even a potato and our chef will lace it with the choice of your masala, stir fry it on a hot tawa, and in a few tantalizing seconds serves it piping hot – all specially created by you and for you.
And, if you need a break – there is the chaat counter is where you can hang out with friends and relish the piquant and tangy taste of bhel puri or dahi puri and pani puri – all served in a clean and hygienic style.
If this is not enough to appease your gastronomic urges, we have also introduced choley bhatura. Steaming hot, balloonin bhaturas are brought to your table to be relished with the spicy choley from the buffet table.
But make sure you leave some room for the final assault at the dessert table.
Luscious looking gateaux (pastries), yummy slices of cheese-cake and delicate soufflés and mousse tempt you and there is no better way to fight temptation than to yield to it – in the last and final course.
Not to forget the ever-favorite chocolate fountain with delightful toppings - the child beside you and the child in you never misses it out.
And most important of all the friendly service and lively ambience only adds to Subz’s charm.
